Cultivar: Moraiolo, Correggiolo, Leccino, Frantoio
Olive groves: Hilly terrain 280-320 m a.s.l.
Crushing: purely mechanical cold pressing followed by crushing and filtering
Combinations: Ideal for raw seasoning of hot and cold dishes and for short cooking times at high temperatures.
Bottling: 2023
A well-balanced and complex oil which is a clear bright green with golden highlights. On the nose and palate, each of the cultivars can be perceived: the pleasantly bitter taste and basil notes of Leccino, the fruitiness of Frantoio, the pungent notes of Correggiolo and the herbaceous and artichoke scents of Moraiolo.
In the '70s Walter Cantatore (Roman gallerist and significant personality for the artistic, literary and humanitarian scene) was hosted by our family in Monaciano and was so impressed by the beauty of this land that he left this beautiful dedication and the drawing of a ball in the guest book.
Nearly 50 years later, we thought his touching words could faithfully and poetically represent Monaciano, so we chose them for the IGT wines and of Extra virgin olive oil.
